Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and resembles wet sand.
- Press this mixture firmly into the bottom of a lined 9x9 inch baking pan.
Baking
- Bake the crust for about 10-12 minutes, or until it’s lightly golden.
- In a separate bowl, beat the softened cream cheese until smooth. Gradually fold in the sugar, then beat in the eggs one at a time, followed by the vanilla extract.
- Pour the cheesecake filling over the cooled crust and spread it out evenly. Bake for 20-25 minutes, or until the center is set.
Cooling and Topping
- Let the bars cool in the pan for about an hour before transferring them to the fridge to chill for at least another hour.
- Before serving, drizzle with caramel sauce and sprinkle with sea salt.
Notes
These bars store beautifully in the fridge for up to a week. Consider using crushed Oreo cookies or vanilla wafers as a substitute for graham crackers in the crust for a twist.
