Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs For that buttery crust
  • cup granulated sugar
  • ½ cup unsalted butter, melted
For the cheesecake filling
  • 16 ounces cream cheese, softened The star of this show!
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
For the caramel topping
  • 1 cup caramel sauce Store-bought works just fine
  • to taste sea salt For extra flavor

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined and resembles wet sand.
  3. Press this mixture firmly into the bottom of a lined 9x9 inch baking pan.
Baking
  1. Bake the crust for about 10-12 minutes, or until it’s lightly golden.
  2. In a separate bowl, beat the softened cream cheese until smooth. Gradually fold in the sugar, then beat in the eggs one at a time, followed by the vanilla extract.
  3. Pour the cheesecake filling over the cooled crust and spread it out evenly. Bake for 20-25 minutes, or until the center is set.
Cooling and Topping
  1. Let the bars cool in the pan for about an hour before transferring them to the fridge to chill for at least another hour.
  2. Before serving, drizzle with caramel sauce and sprinkle with sea salt.

Notes

These bars store beautifully in the fridge for up to a week. Consider using crushed Oreo cookies or vanilla wafers as a substitute for graham crackers in the crust for a twist.
