  • 1 cup fresh mozzarella balls (bocconcini) You can substitute with feta or goat cheese.
  • 1/4 cup fresh basil leaves, chopped Include whole leaves for garnish.
  • 1 tablespoon balsamic glaze Can be substituted with lemon juice or olive oil.
  • to taste Salt and pepper Adjust seasoning according to preference.

Preparation
  1. Start by halving the avocados. Gently scoop out a little bit more flesh to create a nice bowl for the filling.
  2. In a bowl, combine the halved cherry tomatoes, mozzarella balls, and chopped basil. Toss in the balsamic glaze, olive oil, salt, and pepper. Give everything a gentle stir.
  3. Fill the halved avocados with the tomato and mozzarella mixture, ensuring an even distribution.
  4. Top each stuffed avocado with a whole basil leaf and drizzle a little more balsamic glaze if desired.
  5. Serve immediately, optionally with a side of whole-grain crackers or a salad.

Notes

Consider storing filling separately to prevent browning of avocados. Also, cherry tomatoes can save time on chopping.
