Ingredients
  

For the Salad
  • 1 lb fresh calamari, cleaned and sliced into rings
  • 4 cups mixed greens (arugula, spinach, romaine—choose your favorites!)
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, diced
  • 2 tablespoons olives, sliced (green or black based on preference)
For the Dressing
  • 1/4 cup olive oil
  • 2 tablespoons fresh lemon juice (because we all love a little zing!)
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste Pepper
  • a pinch red pepper flakes (optional for a hint of spice)

Method
 

Cook the Calamari
  1. Heat a skillet over medium-high heat. Add a splash of olive oil (about a tablespoon).
  2. Toss in the calamari rings and sauté for about 2-3 minutes until they turn opaque.
  3. Avoid overcooking as it can lead to tough calamari.
Prepare the Dressing
  1. While the calamari is cooking, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper in a small bowl.
  2. Optionally shake it up in a jar for a chic presentation.
Assemble the Salad
  1. In a large bowl, combine mixed greens, cherry tomatoes, red onion, bell pepper, and olives.
  2. Add the cooked calamari on top.
  3. Drizzle the dressing over the salad and gently toss to combine.

Notes

Consider adding toasted nuts for crunch or feta cheese for creaminess to enhance flavor.
