Ingredients
  

For the Bites
  • 1 large sweet potato, peeled and diced
  • 1 pound shrimp, peeled and deveined (don’t forget those tails!)
  • 1 tablespoon Cajun seasoning (or more, if you like a good kick!)
  • 2 tablespoons olive oil, divided
  • to taste Salt and pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread them evenly on a baking sheet lined with parchment paper.
  3. Roast for about 20-25 minutes or until they are tender and caramelized on the edges.
Cooking the Shrimp
  1. While the sweet potatoes are roasting, heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the shrimp and sprinkle with Cajun seasoning. Cook for about 3-4 minutes, or until the shrimp turns pink and opaque.
Assembly
  1. Once the sweet potatoes are done, remove them from the oven and top each piece with a cooked shrimp.
  2. Garnish with chopped parsley before serving.
Serving
  1. Serve warm and enjoy as they won't last long on the plate!

Notes

Consider adding a drizzle of your favorite hot sauce on top for an extra kick. If you don't have fresh parsley, dried herbs can be substituted, but use less as they are more concentrated in flavor.
