Cajun Shrimp and Sausage Gravy with Buttery Biscuits

Ingredients
  

For the Gravy
  • 1 pound raw shrimp, peeled and deveined
  • 1 pound smoked sausage, sliced (andouille is a great choice!)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 2 cups chicken broth
  • 2 tablespoons flour
  • Salt and pepper to taste
  • 2 tablespoons olive oil
For the Biscuits
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 3/4 cup milk

Method
 

Make the Biscuits
  1. Preheat your oven to 425°F (220°C). In a large bowl, mix the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.
Form the Biscuits
  1. Turn the dough onto a floured surface and knead gently just until smooth. Roll out to about 1 inch thick and cut into biscuits. Place on a baking sheet and bake for 12-15 minutes or until golden brown.
Prepare the Gravy
  1. While the biscuits are baking, heat olive oil in a large skillet over medium heat. Add the sausage and cook until browned. Remove the sausage and set aside, leaving the drippings in the pan.
Sauté the Veggies
  1. In the same skillet, add the onion, bell pepper, and garlic. Cook until soft, about 5 minutes. Sprinkle flour over the vegetables and stir for about a minute.
Add the Flavor
  1. Slowly pour in the chicken broth while stirring, then add the Cajun seasoning and diced tomatoes. Bring to a simmer. Add the shrimp and cooked sausage back into the skillet. Cook until the shrimp are pink and cooked through, around 5 minutes.
Season to Taste
  1. Give your gravy a taste and adjust the salt and pepper as needed.
Serve It Up
  1. Split the warm biscuits and ladle the Cajun shrimp and sausage gravy over the top. Dig in and enjoy every last bite!

Notes

Don’t rush the gravy: Allowing the gravy to simmer will deepen the flavors. If it's too spicy, use sour cream or yogurt to mellow it out.
