Ingredients
  

Pasta and Sauce Base
  • 12 ounces fettuccine or pasta of your choice
  • 1 pound smoked sausage, sliced (Andouille is splendid!)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning (Adjust for spice tolerance!)
  • 1 cup grated Parmesan (for serving)
  • Salt and pepper to taste
Vegetables
  • 1 bell pepper, chopped (red, green, or a mix)
  • 1 onion, diced
  • 3 cloves garlic, minced
Garnish
  • Chopped parsley (for garnish)

Method
 

Preparation
  1. In a large pot, cook the fettuccine according to the package directions until al dente. Drain and set aside.
  2. In the same pot, throw in the sliced smoked sausage over medium heat. Cook for about 5-7 minutes until browned and fragrant.
  3. Add the chopped bell pepper, onion, and minced garlic to the pot and sauté for another 3-4 minutes until the veggies are tender.
  4. Pour in the chicken broth and heavy cream, followed by the Cajun seasoning. Stir and let it simmer for about 5 minutes until the sauce thickens slightly.
  5. Toss the cooked pasta into the sauce along with half of the Parmesan cheese, stirring to coat. Season with salt and pepper to taste.
  6. Serve with the remaining Parmesan and garnish with chopped parsley if desired.

Notes

If the pasta is overcooked, it blends beautifully in the sauce. For extra spice, add red pepper flakes or Tabasco. Great for leftovers, just store in an airtight container and reheat with extra broth or cream.
