Method
 

Preparation
  1. In a large bowl, beat together the softened butter and powdered sugar until it’s light and fluffy for about 3-4 minutes.
  2. Add the vanilla extract and mix well. Slowly add in the all-purpose flour and salt until just combined.
  3. Fold in the finely chopped pecans gently.
  4. Scoop about a tablespoon of the dough and roll into a ball. Repeat until all dough is used, placing them on an ungreased baking sheet.
Baking
  1. Preheat the oven to 350°F (175°C) and bake the cookies for 10-12 minutes until slightly golden around the edges but still soft in the center.
  2. Dust the warm cookies generously with powdered sugar after they have cooled slightly.

Notes

Chill the dough for 30 minutes to enhance flavors and ease the rolling process. You can substitute pecans with walnuts or almonds if desired. Store cookies in an airtight container for up to a week.
