Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy—about 2-3 minutes.
- Add the eggs one at a time, followed by the vanilla extract. Mix until everything is beautifully combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring just until combined.
- Fold in the toffee bits.
- Scoop tablespoon-sized portions of dough onto ungreased baking sheets, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
Notes
Cookies are meant to be soft and chewy. Optionally sprinkle sea salt on top right before baking. Store leftovers in an airtight container at room temperature for up to a week.
