Burrata Bruschetta

Ingredients
  

For the Bruschetta
  • 1 loaf French baguette or Italian bread (sliced)
  • 2 cups cherry tomatoes (halved) Use super ripe tomatoes for best flavor.
  • 8 ounces burrata cheese The star of the show!
  • Fresh leaves basil leaves For garnish.
  • 1-2 cloves garlic (minced)
  • 2-3 tablespoons extra virgin olive oil Plus more for drizzling.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Arrange bread slices on a baking sheet, drizzle with olive oil, and sprinkle with salt.
  3. Bake for about 5–7 minutes until golden and crisp.
Tomato Topping
  1. In a bowl, mix the halved cherry tomatoes, minced garlic, a splash of olive oil, and salt and pepper.
  2. Toss well to combine all flavors.
Assembly
  1. Once the bread is out of the oven and slightly cooled, assemble the bruschetta.
  2. Place a dollop of the tomato mixture on each slice, then break open the burrata and spread it on top.
  3. Top with fresh basil leaves.
Serving
  1. Serve immediately while warm or let cool slightly.

Notes

For extra flavor, consider drizzling balsamic glaze or pesto on top. If using leftovers, store in an airtight container in the fridge for up to a day.
