For the Bruschetta
  • 1 piece baguette (or your favorite rustic bread)
  • 2 cups ripe tomatoes, diced Cherry tomatoes work wonderfully!
  • 8 ounces burrata cheese Fresh burrata with a creamy center is ideal.
  • 1/4 cup fresh basil leaves, chiffonade Chiffonade means slicing into ribbons.
  • 2 tablespoons extra virgin olive oil For drizzling on the bread and mixing with tomatoes.
  • Salt and pepper, to taste
  • Balsamic glaze (optional) Highly recommended for extra flair.

Preparation
  1. Preheat the oven to broil.
  2. Slice the baguette into ½ inch thick pieces.
  3. Place the slices on a baking sheet and drizzle with olive oil. Broil for about 2-3 minutes, watching closely for golden brown.
  4. In a mixing bowl, combine the diced tomatoes, chiffonade basil, olive oil, salt, and pepper. Toss gently.
  5. On each toasted bread slice, place a generous dollop of burrata and top it with the tomato mixture. Drizzle with balsamic glaze if desired.
  6. Serve warm or at room temperature, enjoying fresh.

Notes

For the perfect bruschetta, use creamy burrata and feel free to customize with extras like red pepper flakes or substitute tomatoes for peaches in summer. You can also prepare the tomato mixture in advance and chill until assembling.
