Ingredients
  

For the bruschetta
  • 1 loaf Baguette or Ciabatta Bread Sliced into 1-inch thick pieces
  • 8 oz Fresh Burrata Cheese Don't skimp on this!
  • 2 cups Juicy Tomatoes Peach, heirloom, or your local market's best
  • 1 small handful Fresh Basil Roughly chopped
  • 2 tbsp Extra Virgin Olive Oil Use high-quality olive oil
  • to taste Salt and Pepper Seasoning is key
  • to taste Balsamic Glaze Optional, but highly recommended

Method
 

Preparation
  1. Preheat your oven to 400°F. Arrange bread slices on a baking sheet, drizzle with olive oil, and toast until golden brown for about 8-10 minutes.
  2. Chop the tomatoes into bite-sized pieces and place them in a mixing bowl. Add chopped basil, a splash of olive oil, salt, and pepper. Toss gently.
Assembly
  1. Once the bread is cool enough to handle, scoop burrata onto each slice and top with the tomato-basil mixture.
  2. Drizzle with balsamic glaze if desired and serve.

Notes

Choose the ripest, juiciest tomatoes for the best flavor. You can prepare the tomato-basil mix ahead of time. If burrata is unavailable, you can substitute with fresh mozzarella.
