Ingredients
  

For the Bruschetta
  • 1 large loaf crusty Italian or French bread (or gluten-free if preferred) Choose your favorite type of bread.
  • 8 oz burrata cheese Can be substituted with fresh mozzarella or ricotta.
  • 2 cups cherry tomatoes, diced Fresh tomatoes enhance flavor.
  • 2 cloves garlic, minced Adds depth of flavor.
  • 1/4 cup fresh basil, finely chopped Use fresh for best taste.
  • 2 tablespoons balsamic glaze Optional, but recommended for finishing.
  • to taste olive oil, for drizzling Use a good quality olive oil.
  • to taste salt and pepper Season to preference.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the crusty loaf into half-inch thick slices and lay them out on a baking sheet.
  3. Drizzle the slices with olive oil and sprinkle with salt and pepper.
  4. Toast the slices in the oven for about 5-7 minutes, until golden brown and crispy.
Make Tomato Mixture
  1. In a bowl, combine the diced cherry tomatoes, minced garlic, and chopped basil.
  2. Drizzle with olive oil and season with salt and pepper.
Assembly
  1. Once the bread is toasted, assemble the bruschetta by scooping a generous spoonful of the tomato mixture onto each slice.
  2. Tear the burrata and place it on top of the tomato mixture.
Finish and Serve
  1. Drizzle with balsamic glaze and sprinkle fresh basil on top.
  2. Serve immediately and enjoy your delicious bruschetta!

Notes

Make the tomato mixture ahead of time but assemble the bruschetta closer to serving to keep the bread crispy. Alternate toppings can include roasted red peppers or chili flakes for an extra kick.
