Ingredients
  

For the dough
  • 2 1/2 cups all-purpose flour Chilled
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup unsalted butter, chilled and diced
  • 6-8 tablespoons cold water
For the filling
  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • 1 tablespoon cornstarch
For the glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, whisk together the flour, salt, and sugar. Add the chilled butter, cutting it in until the mixture resembles coarse crumbs.
  2. Gradually stir in the cold water until the dough holds together. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
Making the Filling
  1. In a small bowl, mix the brown sugar, cinnamon, and cornstarch.
Rolling and Cutting
  1. Roll the dough out on a lightly floured surface to about 1/8 inch thick and cut out rectangles approximately 4x6 inches.
Assembling the Pop Tarts
  1. Place half of the rectangles on a baking sheet lined with parchment paper. Spoon about 1 tablespoon of the filling onto the center of each.
  2. Moisten the edges with water and top with the remaining rectangles. Use a fork to crimp the edges and seal them. Poke a few holes in the tops to let the steam escape.
Baking
  1. Preheat your oven to 375°F (190°C) and bake the pop tarts for about 20 minutes or until golden brown.
Glazing
  1. While the pop tarts are baking, mix the powdered sugar, milk, and vanilla until smooth. Once the pop tarts have cooled slightly, drizzle the glaze over the top.

Notes

Chill the dough for best results. Substitute with gluten-free flour if needed. Feel free to switch up the filling flavor based on preference.
