Ingredients
  

Citrus Fruits
  • 2 large large navel oranges or any citrus you love!
  • 1 large large grapefruit
  • Juice of 2 limes Juice of 2 limes
Vegetables
  • 1 medium medium cucumber, diced
  • 1 bell pepper bell pepper (red or yellow, diced) for a pop of color
  • 1 small small red onion, thinly sliced
  • 1 jalapeño pepper jalapeño pepper, finely chopped use less for milder heat
  • 1/4 cup fresh cilantro or parsley, chopped cilantro can be replaced with parsley if desired
Dressing
  • 2 tablespoons olive oil
  • to taste none salt and pepper

Method
 

Preparation
  1. Begin by peeling the oranges and grapefruit, removing as much of the white pith as you can. Cut them into segments or chop them into bite-sized pieces.
  2. In a large mixing bowl, add the diced cucumber, bell pepper, and finely chopped jalapeño. Remember, you can always remove the seeds from the jalapeño for a milder flavor!
Combining Ingredients
  1. Gently toss in the citrus segments, along with the thinly sliced red onion and chopped cilantro or parsley.
Dressing and Serving
  1. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Drizzle the dressing over your salad and toss gently to combine.
  2. Taste and adjust salt and pepper as needed.
  3. Serve fresh. This salad is best enjoyed immediately but can be refrigerated for up to 2 hours.

Notes

Using a mix of citrus fruits adds vibrancy. Fresh ingredients are preferable for optimal flavor. Store leftovers in an airtight container for up to 2 days.
