- Begin by peeling the oranges and grapefruit, removing as much of the white pith as you can. Cut them into segments or chop them into bite-sized pieces.
- In a large mixing bowl, add the diced cucumber, bell pepper, and finely chopped jalapeño. Remember, you can always remove the seeds from the jalapeño for a milder flavor!
Combining Ingredients
- Gently toss in the citrus segments, along with the thinly sliced red onion and chopped cilantro or parsley.
Dressing and Serving
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Drizzle the dressing over your salad and toss gently to combine.
- Taste and adjust salt and pepper as needed.
- Serve fresh. This salad is best enjoyed immediately but can be refrigerated for up to 2 hours.
Notes
Using a mix of citrus fruits adds vibrancy. Fresh ingredients are preferable for optimal flavor. Store leftovers in an airtight container for up to 2 days.
