  • 1 sheet puff pastry Store-bought makes it super easy!
  • 8 oz wheel of brie cheese
  • 1/4 cup fruit preserves Apricot, raspberry, or fig are great choices.
  • 1 large egg Beaten, for egg wash.
  • to taste fresh herbs Such as thyme or rosemary, optional.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the puff pastry sheet on a lightly floured surface and cut it into squares about 3 inches each.
  3. Place a small spoonful of fruit preserves in the center of each pastry square.
  4. Cut the brie cheese into small wedges and place one wedge on top of the preserves.
  5. If using fresh herbs, sprinkle a tiny bit on top.
Assembly
  1. Fold the corners of the pastry over the cheese and preserves, pinching to seal.
  2. Brush the tops of the bites with the beaten egg for a shiny finish.
Cooking
  1. Place the assembled Brie Bites on a baking sheet lined with parchment paper.
  2. Bake for about 15-20 minutes, or until they are puffed and golden brown.

  1. Let the Brie Bites cool for a minute before serving.
