Brie, Bacon & Blackberry Grilled Sandwiches

Ingredients
  

Main Ingredients
  • 4 slices slices of your favorite bread (sourdough works wonderfully!)
  • 4 ounces brie cheese, sliced
  • 4 slices crispy bacon
  • 1/2 cup fresh blackberries
  • 2 tablespoons butter, softened
  • 1 pinch salt optional
  • 1 pinch black pepper optional, but recommended for flavor

Method
 

Preparation
  1. Cook your bacon until it's nice and crispy.
  2. While the bacon is cooking, lay out the slices of brie on the bread.
Assembly
  1. Spread a thin layer of softened butter on the outside of each slice of bread.
  2. On the unbuttered side of two slices, layer the brie, then the crunchy bacon, and garnish with the blackberries.
  3. If desired, sprinkle some black pepper on top.
  4. Cover with the remaining slices of bread, buttered side facing out.
Cooking
  1. Heat a non-stick skillet over medium heat and place the sandwiches in.
  2. Cook for about 4-5 minutes on each side or until golden brown and the brie is melted.
Serving
  1. Once toasted, remove from the skillet and slice diagonally.
  2. Serve warm.

Notes

For a sweet twist, drizzle honey over the blackberries. Substitute brie with goat cheese or cheddar, and blackberries with raspberries or figs. Allow bacon to drain on a paper towel to keep it crispy.
