Preparation
- Cook your bacon until it's nice and crispy.
- While the bacon is cooking, lay out the slices of brie on the bread.
Assembly
- Spread a thin layer of softened butter on the outside of each slice of bread.
- On the unbuttered side of two slices, layer the brie, then the crunchy bacon, and garnish with the blackberries.
- If desired, sprinkle some black pepper on top.
- Cover with the remaining slices of bread, buttered side facing out.
Cooking
- Heat a non-stick skillet over medium heat and place the sandwiches in.
- Cook for about 4-5 minutes on each side or until golden brown and the brie is melted.
Serving
- Once toasted, remove from the skillet and slice diagonally.
- Serve warm.
Notes
For a sweet twist, drizzle honey over the blackberries. Substitute brie with goat cheese or cheddar, and blackberries with raspberries or figs. Allow bacon to drain on a paper towel to keep it crispy.
