  • 1 sheet puff pastry, thawed Use quality puff pastry for best results.
  • 6 ounces brie cheese, sliced Feel free to substitute with other soft cheeses like goat cheese.
  • 1 cup fresh blackberries You can use more if desired.
  • 1 each egg For egg wash to achieve golden color.
  • 1 tablespoon honey Optional, but highly recommended for sweetness.
  • to taste fresh thyme leaves For garnish, optional but enhances presentation.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. On a lightly floured surface, roll out the puff pastry into a rectangular shape.
  3. Layer the sliced brie evenly across the pastry, then spread the blackberries on top. Optionally, drizzle the honey.
  4. Roll the pastry into a log, keeping it tight.
  5. Slice the log into 1-inch thick rounds and place them cut side up on a parchment-lined baking sheet.
  6. Beat the egg and brush the mixture over each swirl, optionally sprinkling fresh thyme on top.
  7. Bake for 20-25 minutes until golden brown.
  8. Allow to cool on a wire rack for a few minutes before serving.

Notes

Use quality puff pastry for best results. Experiment with different fruits or cheeses for variations. Store leftovers in an airtight container in the fridge for up to a couple of days, best enjoyed fresh.
