  • 4 pounds beef short ribs

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine Optional to sip while cooking
  • 4 cups beef broth
  • 2 sprigs fresh thyme or 1 teaspoon dried thyme
  • 1 bay leaf

Method
 

Preparation
  1. Season the short ribs generously with salt and pepper.
  2. In a large, heavy pot, heat the olive oil over medium-high heat.
  3. Add the short ribs in batches, searing them on all sides until golden brown.
  4. Remove the ribs and toss in the diced onion and carrots. Sauté for about 5 minutes until soft.
  5. Add garlic and cook until fragrant, about 1 minute.
  6. Stir in tomato paste and cook for another minute.
  7. Pour in the red wine, bring to a boil and let it reduce for 3-5 minutes.
  8. Add beef broth, thyme, and bay leaf, and bring to a gentle simmer.
  9. Nestle seared short ribs back into the pot, cover with lid, and reduce heat to low.
  10. Let them braise for 2-3 hours until meat is fork-tender.
  11. Remove bay leaf and thyme sprigs, serve immediately or let sit for richer flavor.

Notes

For an elevated experience, serve ribs over creamy polenta or rich mashed potatoes. You can prepare the dish the day before and reheat gently.
