Ingredients
  

For the Doughnut Holes
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 cup whole milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • as needed Oil for frying (canola or vegetable oil) Use enough oil to fill a pot with 2 inches for frying.
For the Cream Filling
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
For the Chocolate Glaze
  • 1 cup semi-sweet chocolate chips
  • 1 tbsp coconut oil or butter This helps to smooth the glaze.

Method
 

Mix It Up
  1. Whisk together the flour, baking powder, sugar, and salt in a large bowl.
  2. In another bowl, mix the milk, eggs, melted butter, and vanilla extract until combined.
  3. Gradually add the wet ingredients to the dry ingredients and stir until just combined.
Let Them Rise
  1. Cover your bowl with a clean kitchen towel and let the dough rest for about 30 minutes.
Heat the Oil
  1. Heat about 2 inches of oil in a deep pot over medium heat until it reaches 350°F.
Fry ‘Em Up
  1. Use a small cookie scoop or spoon to drop dollops of dough into the hot oil, being careful not to overcrowd the pot.
  2. Fry them for about 2-3 minutes on each side, or until golden brown.
  3. Remove with a slotted spoon and let them drain on paper towels.
Make the Cream Filling
  1. Whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
Fill ‘Er Up
  1. Once cooled, poke a hole in the center of each doughnut hole and fill it with your cream mixture.
Chocolate Glaze Magic
  1. In a microwave-safe bowl, combine the chocolate chips and coconut oil/butter, then microwave in 30-second intervals, stirring in between until smooth.
  2. Dip the filled doughnut holes in the chocolate glaze, letting any excess drip off.
Let Them Chill
  1. Place the glazed doughnut holes on a wire rack or parchment paper to cool and set.

Notes

Store leftovers in an airtight container for up to 2 days at room temperature. Add spices like cinnamon for a twist. A rustic appearance is perfectly fine!
