Method
Mix It Up
- Whisk together the flour, baking powder, sugar, and salt in a large bowl.
- In another bowl, mix the milk, eggs, melted butter, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients and stir until just combined.
Let Them Rise
- Cover your bowl with a clean kitchen towel and let the dough rest for about 30 minutes.
Heat the Oil
- Heat about 2 inches of oil in a deep pot over medium heat until it reaches 350°F.
Fry ‘Em Up
- Use a small cookie scoop or spoon to drop dollops of dough into the hot oil, being careful not to overcrowd the pot.
- Fry them for about 2-3 minutes on each side, or until golden brown.
- Remove with a slotted spoon and let them drain on paper towels.
Make the Cream Filling
- Whip the heavy cream, powdered sugar, and vanilla extract together until soft peaks form.
Fill ‘Er Up
- Once cooled, poke a hole in the center of each doughnut hole and fill it with your cream mixture.
Chocolate Glaze Magic
- In a microwave-safe bowl, combine the chocolate chips and coconut oil/butter, then microwave in 30-second intervals, stirring in between until smooth.
- Dip the filled doughnut holes in the chocolate glaze, letting any excess drip off.
Let Them Chill
- Place the glazed doughnut holes on a wire rack or parchment paper to cool and set.
Notes
Store leftovers in an airtight container for up to 2 days at room temperature. Add spices like cinnamon for a twist. A rustic appearance is perfectly fine!
