  • 1 pound boneless chicken thighs (or breasts)
  • 1 cup rice (white or brown)
  • 1 cup chicken broth
  • ½ cup bold honey BBQ sauce (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 cup chopped bell peppers (red and green for color)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional but recommended)

Preparation
  1. Heat the olive oil over medium heat in a large skillet or pan.
  2. Toss in your chicken thighs, seasoning them with garlic powder, onion powder, salt, and pepper. Cook for about 5-6 minutes on each side until they are beautifully golden brown.
  3. Once your chicken is ready, pour in the chicken broth and add the rice directly into the pan. Give it a good stir to distribute everything evenly.
  4. Drizzle the bold honey BBQ sauce over the chicken, making sure to cover them generously. Flip the chicken to coat it well.
  5. Cover the pan and let it simmer on low heat for about 20 minutes.
  6. Toss in your chopped bell peppers for the last five minutes of cooking.
  7. Once everything is cooked through and the rice is tender, sprinkle with chopped green onions before serving.

Notes

Feel free to substitute chicken thighs with any chicken you have. Quinoa or couscous can replace rice. This recipe is scalable; double the ingredients to serve more people. Add hot sauce for a spicier kick.
