Blueberry Swirl Yogurt Bites

Ingredients

  • 2 cups plain yogurt Greek yogurt can be used for a protein boost.
  • 1 cup fresh blueberries Frozen blueberries can be used; thaw them before use.
  • 2 tablespoons honey Maple syrup can be used for added depth of flavor.
  • 1 teaspoon vanilla extract Adds sweetness.

Method
 

Preparation
  1. If using fresh blueberries, rinse and dry them. If using frozen, let them thaw on the counter.
  2. In a mixing bowl, mash the blueberries lightly with a fork or potato masher to keep them chunky.
  3. In another bowl, combine the yogurt, honey, and vanilla extract. Stir until well blended and creamy.
  4. Gently fold the mashed blueberries into the yogurt mixture to create swirls without overmixing.
  5. Spoon the mixture into silicone molds or an ice tray.
  6. For a layered presentation, alternate layers of yogurt and blueberry mixture.
Freezing
  1. Pop the molds into the freezer for about 4-6 hours or until fully solid.
Serving
  1. Once frozen solid, pop the yogurt bites out of the molds and enjoy!
  2. Store any extras in a zip-top bag in the freezer for a quick and healthy treat.

Notes

Experiment with different yogurt flavors for added zing! Store bites in an airtight container for up to three months.
