Preparation
- If using fresh blueberries, rinse and dry them. If using frozen, let them thaw on the counter.
- In a mixing bowl, mash the blueberries lightly with a fork or potato masher to keep them chunky.
- In another bowl, combine the yogurt, honey, and vanilla extract. Stir until well blended and creamy.
- Gently fold the mashed blueberries into the yogurt mixture to create swirls without overmixing.
- Spoon the mixture into silicone molds or an ice tray.
- For a layered presentation, alternate layers of yogurt and blueberry mixture.
Freezing
- Pop the molds into the freezer for about 4-6 hours or until fully solid.
Serving
- Once frozen solid, pop the yogurt bites out of the molds and enjoy!
- Store any extras in a zip-top bag in the freezer for a quick and healthy treat.
Notes
Experiment with different yogurt flavors for added zing! Store bites in an airtight container for up to three months.
