For the Blueberry Balsamic Dressing
  • 1/2 cup fresh blueberries Adds sweetness to the dressing.
  • 1/4 cup balsamic vinegar Gives a tangy kick.
  • 1/4 cup olive oil Healthy fat.
  • 2 tablespoons honey For sweetness.
  • Salt and pepper to taste To enhance flavors.

Method
 

Preparation
  1. Blend the 1/2 cup of fresh blueberries, balsamic vinegar, olive oil, honey, salt, and pepper in a blender until smooth.
  2. Taste the dressing and adjust as necessary.
Salad Assembly
  1. In a large salad bowl, toss together the spinach, blueberries, feta cheese, walnuts, and red onion.
  2. Pour the homemade dressing over the salad and toss gently to coat.

Notes

You can prep the dressing and salad ingredients ahead of time. Substitute walnuts with almonds or feta with goat cheese if preferred. To make it a meal, add grilled chicken or quinoa.
