Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Press firmly into the bottom of a greased 8×8-inch baking dish.
- Bake for about 15 minutes, or until lightly golden.
- While the crust bakes, blend the blueberries until smooth.
- In a medium bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, cornstarch, and salt. Mix in the blended blueberries until well-combined.
- Pour the blueberry curd over the baked crust and return to the oven.
- Bake for 20-25 minutes, or until set.
- Let the bars cool to room temperature, then refrigerate for at least an hour.
- Dust with powdered sugar, slice, and serve.
Notes
Store leftovers in an airtight container in the fridge for up to a week. You can substitute lime juice for lemon juice if preferred.
