Ingredients
  

For the Crust
  • 1.5 cups all-purpose flour
  • 0.5 cups powdered sugar
  • 0.5 teaspoon salt
  • 0.75 cups unsalted butter, softened
For the Blueberry Curd
  • 1 cup fresh blueberries Frozen blueberries can be used, just thaw and drain excess juices.
  • 0.5 cups granulated sugar
  • 2 large eggs
  • 0.5 cups fresh lemon juice
  • 2 tablespoons lemon zest Don't skip this for extra flavor.
  • 1 tablespoon cornstarch
  • 1 pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, powdered sugar, and salt. Cut in the softened butter until the mixture resembles coarse crumbs. Press firmly into the bottom of a greased 8×8-inch baking dish.
  3. Bake for about 15 minutes, or until lightly golden.
  4. While the crust bakes, blend the blueberries until smooth.
  5. In a medium bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, cornstarch, and salt. Mix in the blended blueberries until well-combined.
  6. Pour the blueberry curd over the baked crust and return to the oven.
  7. Bake for 20-25 minutes, or until set.
  8. Let the bars cool to room temperature, then refrigerate for at least an hour.
  9. Dust with powdered sugar, slice, and serve.

Notes

Store leftovers in an airtight container in the fridge for up to a week. You can substitute lime juice for lemon juice if preferred.
