Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup whole milk
  • 3.5 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 3 large eggs
For the Blueberry Filling
  • 2 cups fresh or frozen blueberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
For the Cream Cheese Frosting
  • 8 oz cream cheese, softened
  • 0.5 cups unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract

Method
 

Baking the Cake Layers
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened butter and sugar until pale and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Gradually add it to the butter mixture, alternating with the milk, and mix until just combined.
  7. Pour the batter evenly into two greased 9-inch round cake pans.
  8. Bake for about 25-30 minutes or until a toothpick comes out clean.
  9. Let them cool completely.
Preparing the Blueberry Filling
  1. In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice.
  2. Cook over medium heat until bubbling and thick.
Making the Cream Cheese Frosting
  1. In a bowl, cream together the softened cream cheese and butter until smooth.
  2. Gradually add powdered sugar while mixing until fluffy.
  3. Add the vanilla and a pinch of salt.
Assembling the Cake
  1. Place one cake layer onto a serving plate.
  2. Spread a generous layer of cream cheese frosting on top, followed by a layer of blueberry filling.
  3. Place the second cake layer on top and repeat the frosting and filling process.
  4. Frost the entire cake with the remaining cream cheese mix.
Garnishing and Serving
  1. Sprinkle fresh blueberries on top.
  2. Add a few mint leaves for decoration.

Notes

Chilling is key: Let your cake cool completely before frosting it to avoid a melty frosting disaster. For an extra touch of decadence, drizzle some blueberry syrup over your slices.
