Method
Baking the Cake Layers
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the softened butter and sugar until pale and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add it to the butter mixture, alternating with the milk, and mix until just combined.
- Pour the batter evenly into two greased 9-inch round cake pans.
- Bake for about 25-30 minutes or until a toothpick comes out clean.
- Let them cool completely.
Preparing the Blueberry Filling
- In a saucepan, combine blueberries, sugar, cornstarch, and lemon juice.
- Cook over medium heat until bubbling and thick.
Making the Cream Cheese Frosting
- In a bowl, cream together the softened cream cheese and butter until smooth.
- Gradually add powdered sugar while mixing until fluffy.
- Add the vanilla and a pinch of salt.
Assembling the Cake
- Place one cake layer onto a serving plate.
- Spread a generous layer of cream cheese frosting on top, followed by a layer of blueberry filling.
- Place the second cake layer on top and repeat the frosting and filling process.
- Frost the entire cake with the remaining cream cheese mix.
Garnishing and Serving
- Sprinkle fresh blueberries on top.
- Add a few mint leaves for decoration.
Notes
Chilling is key: Let your cake cool completely before frosting it to avoid a melty frosting disaster. For an extra touch of decadence, drizzle some blueberry syrup over your slices.
