Preparation
- In a large mixing bowl, combine your softened cream cheese, blueberries, sugar, vanilla extract, and optional cinnamon. Mix until creamy, leaving some blueberry chunks for texture.
Assembly
- Lay an egg roll wrapper on a clean surface and spoon about 2 tablespoons of the blueberry mixture onto the center.
- Fold the bottom corner over the filling, fold in the sides, and roll tightly, using water to seal the edge.
- Repeat until all filling is used.
Cooking
- Heat oil in a deep frying pan over medium-high heat.
- Gently drop egg rolls in the hot oil, frying for about 3-4 minutes on each side until golden brown and crispy.
Serving
- Remove from oil and drain on paper towels. Dust with powdered sugar and serve warm with a side of dipping sauce if desired.
Notes
Don't worry if some egg rolls look rough; it adds to their charm. For a twist, consider adding lemon zest to the filling.
