For the Egg Rolls
  • 8 pieces egg roll wrappers
  • 1 cup cream cheese, softened Use mascarpone or vegan alternative if preferred
  • 1 cup fresh blueberries Frozen blueberries can be used, just thaw and drain well
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Optional, but recommended
  • Oil as needed for frying Vegetable or canola oil works great

Method
 

Preparation
  1. In a large mixing bowl, combine your softened cream cheese, blueberries, sugar, vanilla extract, and optional cinnamon. Mix until creamy, leaving some blueberry chunks for texture.
Assembly
  1. Lay an egg roll wrapper on a clean surface and spoon about 2 tablespoons of the blueberry mixture onto the center.
  2. Fold the bottom corner over the filling, fold in the sides, and roll tightly, using water to seal the edge.
  3. Repeat until all filling is used.
Cooking
  1. Heat oil in a deep frying pan over medium-high heat.
  2. Gently drop egg rolls in the hot oil, frying for about 3-4 minutes on each side until golden brown and crispy.
Serving
  1. Remove from oil and drain on paper towels. Dust with powdered sugar and serve warm with a side of dipping sauce if desired.

Notes

Don't worry if some egg rolls look rough; it adds to their charm. For a twist, consider adding lemon zest to the filling.
