Ingredients
  

For the Salmon
  • 4 filets salmon filets
  • 2 tablespoons Cajun seasoning Adjust for spice level preference
  • 1 tablespoon olive oil For searing
For the Pasta and Sauce
  • 12 ounces mafaldine pasta Cook according to package instructions
  • 1 cup cherry tomatoes, halved For the sauce
  • 2 cups heavy cream For creaminess
  • 1 cup fresh basil, chopped For flavor
  • Salt and pepper to taste

Method
 

Blacken the Salmon
  1. Heat a cast iron skillet on medium-high heat.
  2. Sprinkle Cajun seasoning over both sides of the salmon filets.
  3. Add olive oil to the skillet and sear the salmon filets for 3-4 minutes on each side until perfectly blackened.
  4. Set aside and let rest.
Cook the Pasta
  1. In a large pot, bring salted water to a boil.
  2. Add mafaldine pasta and cook according to package instructions until al dente.
  3. Drain and set aside.
Make the Creamy Sauce
  1. In the same skillet, add cherry tomatoes and sauté for about 3 minutes until they start to soften.
  2. Pour in the heavy cream and let it simmer for 5 minutes until slightly thickened.
  3. Stir in fresh basil and season with salt and pepper to taste.
Combine and Serve
  1. Toss the cooked mafaldine into the creamy tomato basil sauce until well coated.
  2. Gently place blackened salmon on top and serve.

Notes

For spice sensitivity, use a mild seasoning or reduce the amount of Cajun spice. Can substitute salmon with firm fish like tuna or chicken.
