Preparation
- In a bowl, combine paprika, onion powder, garlic powder, cayenne pepper, salt, and black pepper. Rub the spice mix over both sides of the chicken breasts.
- Heat the olive oil in a large skillet over medium-high heat.
Cooking
- Add the seasoned chicken breasts to the hot skillet. Cook for about 6-7 minutes on each side or until fully cooked and blackened.
- Remove the chicken from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the diced tomatoes.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Let it simmer for a couple of minutes until the sauce thickens slightly.
Combine and Serve
- Slice the blackened chicken and add it back to the skillet with the sauce. Gently stir to coat the chicken in the creamy sauce.
- Serve with fresh basil sprinkled on top.

- Serve this dish over pasta, rice, or with crusty bread to soak up the sauce.
Notes
Don't skimp on the spices. Leftovers can be stored in an airtight container in the fridge for up to 3 days. For a lighter version, swap heavy cream for half-and-half or whole milk.
