- In a medium saucepan, toss together the blackberries, sugar, lime juice, lime zest, cornstarch, and water. Give it a gentle stir.
- Over medium heat, cook the blackberry mixture until it starts bubbling, about 5-7 minutes. Stir continuously to avoid lumps.
- Once thickened, remove from heat and let it cool slightly.
- Pour the blackberry-lime filling into the pre-baked pie crust, spreading it out evenly.
- Cover and refrigerate for about 1-2 hours or until set.
- Slice and serve chilled, optionally topped with whipped cream or vanilla ice cream.
Notes
Don’t overmix when combining the berries and sugar; adjust sweetness to taste and feel free to substitute with other berries.
