  • 13 oz sirloin beef, thinly sliced
  • 8 oz green beans, trimmed and cut into bite-sized pieces
  • 8 oz mushrooms, sliced (shiitake or button mushrooms recommended)
  • 3 tablespoons soy sauce
  • 2 teaspoons freshly cracked black pepper Add more if you like it spicy
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil (optional) For additional flavor

Method
 

Preparation
  1. In a medium bowl, combine sliced beef with soy sauce, black pepper, and cornstarch. Let it marinate for about 15 minutes.
  2. While the beef is marinating, prepare the green beans and mushrooms.
Cooking
  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the marinated beef and sauté until browned, about 4-5 minutes.
  2. Add mushrooms, green beans, garlic, and ginger to the skillet. Stir-fry everything together until the green beans are tender yet crisp, about 4-5 more minutes.
  3. Drizzle in the sesame oil (if using) and toss everything well. Adjust with more black pepper if desired.
Serving
  1. Serve hot over steamed rice, quinoa, or enjoy it as is.

Notes

For quicker preparation, consider pre-slicing beef at the grocery store. For added crunch, toss in some cashews or more garlic. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
