Preparation
- Brew a strong cup of coffee and let it cool.
- In a large mixing bowl, combine the mascarpone cheese, heavy cream, powdered sugar, and vanilla extract. Whip until it forms soft peaks.
- Dip the chocolate cake crumbles quickly into the cooled coffee, just a few seconds so it’s not soggy.
- Start layering: pack a portion of the dipped cake at the bottom of a trifle dish or individual cups.
- Spread a layer of the mascarpone mixture over the cake. Top it off with a spoonful of cherry pie filling.
- Repeat these layers until you reach the top of your dish. The last layer should be the mascarpone mixture.
- Cover your dessert with plastic wrap and refrigerate for at least 4 hours, or overnight.
- Before serving, dust with cocoa powder, sprinkle chocolate shavings, and add fresh cherries.
Notes
Keep leftovers covered in the fridge for up to 3 days. This dessert is better when made a day ahead to fully develop the flavors.
