  • 1 can (15 oz) black-eyed peas, drained and rinsed Canned peas save time
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup diced red onion
  • 1/2 cup diced bell peppers (red or green) Use your favorite color
  • 1/4 cup fresh cilantro, chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Method
 

Preparation
  1. Gather all your ingredients.
  2. In a large mixing bowl, combine the black-eyed peas, diced tomatoes, red onion, bell peppers, and cilantro. Stir gently.
  3. In a separate bowl or jar, mix the olive oil, red wine vinegar, lime juice, garlic powder, cumin, salt, and pepper.
  4. Pour the dressing over the black-eyed pea mixture and stir gently until well coated. Cover and let it chill for at least 30 minutes.
  5. Serve with your favorite tortilla chips.

Notes

Feel free to customize by adding jalapeƱos for heat or any leftover vegetables. Leftovers can be stored in an airtight container in the fridge for 3-4 days.
