Ingredients
  

For the Black Bean Patties
  • 1 can black beans, drained and rinsed
  • 1/2 cup breadcrumbs (regular or gluten-free) You can substitute with crushed crackers or old bread.
  • 1/4 cup finely chopped onion
  • 1/4 cup corn (canned or frozen)
  • 1 each egg, beaten For a vegan option, replace with flax or chia seed mixture.
  • 1 tsp cumin Adds warmth to the flavor.
  • to taste salt and pepper
  • as needed tbsp olive oil for cooking
For Serving
  • cooked brown rice or quinoa Use as a base for the bowls.
  • toppings: diced avocado, salsa, fresh cilantro, diced tomatoes, or your favorites Customize the toppings as per your preference.

Preparation
  1. In a large bowl, combine the black beans, breadcrumbs, chopped onion, corn, and cumin. Add salt and pepper to taste. Gently mash the beans using a fork or your hands, leaving some texture.
  2. Add the beaten egg to the mixture and combine. Form the mixture into about four burger patties.
Cooking
  1. Heat some olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side until golden brown and slightly crispy.
Assembly
  1. To create the bowls, start with a base of cooked brown rice or quinoa. Top with a black bean burger and your choice of toppings.
Serving
  1. Scoop a generous portion, dig in, and enjoy your meal!

Notes

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat before serving. Spice up the burgers with chili powder or paprika if desired.
