Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium mixing bowl, combine the peanut butter, sugar, egg, and vanilla extract. Stir everything together until smooth and creamy.
  3. Sprinkle in the baking soda and salt, and mix until fully incorporated.
  4. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart. Roll them in a bit of sugar for extra sparkle.
  5. Take a fork and press it down gently on each cookie to create the signature crisscross pattern.
Baking
  1. Pop the baking sheet into the oven and let the cookies bake for about 10-12 minutes, until the edges are just lightly golden.
  2. Once baked, remove them from the oven and let them cool on the sheet for about 5 minutes before transferring to a wire rack.
