Ingredients
  

Noodle Ingredients
  • 8 oz egg noodles or rice noodles if preferred
Cooking Ingredients
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 2 cups cooked chicken, shredded or tofu for vegetarian option
  • 1 cup carrots, julienned
  • 1 cup bell pepper, sliced
  • 2 cups bok choy or spinach for added greens
  • 2 tablespoons soy sauce essential for flavor
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Green onions, chopped for garnish

Method
 

Cooking the Noodles
  1. In a large pot, bring water to a boil. Add the egg noodles and cook until al dente, about 5-7 minutes. Drain and set aside.
Sautéing the Aromatics
  1. In a large skillet or wok, heat vegetable oil over medium heat. Add the minced garlic and chopped onion, stirring until fragrant and translucent, about 3-4 minutes.
Adding Veggies and Protein
  1. Add the shredded chicken (or tofu), carrots, and bell peppers. Stir-fry for about 5 minutes until softened.
Mixing in the Greens
  1. Add the bok choy or spinach to the pan, stirring until wilted, about 1 minute.
Combining Everything
  1. Toss in the cooked noodles and drizzle with soy sauce and sesame oil. Mix well, season with salt and pepper to taste.
Garnishing and Serving
  1. Plate the noodles and garnish with chopped green onions before serving.

Notes

Don’t overcook the noodles. Feel free to customize with any vegetables on hand. For added spice, include chili oil or crushed red pepper flakes.
