  • 4 pieces boneless, skinless chicken breasts Trimmed and patted dry
  • 1 cup fresh blueberries
  • 2 tablespoons fresh thyme leaves Or 1 tablespoon dried thyme
  • 3 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar Optional but recommended
  • 2 cloves garlic Minced
  • to taste salt and pepper

Method
 

Preparation
  1. Pat the chicken dry with a paper towel and season both sides with salt, pepper, and half of the thyme.
Cooking
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
  2. In a small saucepan, combine the remaining blueberries, honey, balsamic vinegar (if using), and the rest of the thyme. Bring to a gentle simmer and let bubble for about 5 minutes until the blueberries burst and form a sauce.
  3. Pour the blueberry sauce over the cooked chicken and let it simmer together for a couple of minutes.
Serving
  1. Plate the chicken and drizzle any remaining sauce over the top. Serve with a side of green veggies or fluffy rice.

Notes

If the sauce looks a little lumpy, don’t worry—it’s part of the charm! Add a pinch of red pepper flakes for a kick if desired.
