Preparation
- Pat the chicken dry with a paper towel and season both sides with salt, pepper, and half of the thyme.
Cooking
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through.
- In a small saucepan, combine the remaining blueberries, honey, balsamic vinegar (if using), and the rest of the thyme. Bring to a gentle simmer and let bubble for about 5 minutes until the blueberries burst and form a sauce.
- Pour the blueberry sauce over the cooked chicken and let it simmer together for a couple of minutes.
Serving
- Plate the chicken and drizzle any remaining sauce over the top. Serve with a side of green veggies or fluffy rice.
Notes
If the sauce looks a little lumpy, don’t worry—it’s part of the charm! Add a pinch of red pepper flakes for a kick if desired.
