Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 cup pistachio nuts, finely chopped
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp vanilla extract
For the Frosting
  • 0.5 cup unsalted butter, softened
  • 1 cup cream cheese
  • 2 cups powdered sugar
  • 0.5 cup pistachio nuts, ground (additional for topping)
  • 1 tsp vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour your cake pans.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together softened butter and sugar until smooth.
  4. Beat in the eggs one at a time, then pour in the milk and vanilla extract, mixing until blended.
  5. Gradually add the dry mixture into your wet ingredients, mixing until just combined.
  6. Fold in the finely chopped pistachios.
Baking
  1. Divide the batter evenly into your prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  2. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
Frosting
  1. In a separate bowl, beat together the softened butter and cream cheese until smooth.
  2. Gradually add the powdered sugar and ground pistachios, mixing until well combined.
  3. Add the vanilla extract and mix until fluffy.
Assembly
  1. Once the cakes are completely cooled, spread a layer of frosting between the two layers and on top of the cake.
  2. Sprinkle additional ground pistachios on top for garnish.
