Preparation
- Preheat your oven to 350°F (175°C) and grease and flour your cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together softened butter and sugar until smooth.
- Beat in the eggs one at a time, then pour in the milk and vanilla extract, mixing until blended.
- Gradually add the dry mixture into your wet ingredients, mixing until just combined.
- Fold in the finely chopped pistachios.
Baking
- Divide the batter evenly into your prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
Frosting
- In a separate bowl, beat together the softened butter and cream cheese until smooth.
- Gradually add the powdered sugar and ground pistachios, mixing until well combined.
- Add the vanilla extract and mix until fluffy.
Assembly
- Once the cakes are completely cooled, spread a layer of frosting between the two layers and on top of the cake.
- Sprinkle additional ground pistachios on top for garnish.
