  • 2 cups mashed potatoes leftover works great
  • 1 cup cooked beef sausage, diced
  • 1 cup sauerkraut, drained and chopped
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup breadcrumbs
  • 1 each egg, beaten
  • Salt and pepper to taste
  • Olive oil or cooking spray for frying

Preparation
  1. In a mixing bowl, combine the mashed potatoes, diced beef sausage, chopped sauerkraut, crumbled blue cheese, breadcrumbs, and the beaten egg. Season with salt and pepper. Mix until all ingredients are well combined.
  2. Roll the mixture into small balls, about the size of a golf ball.
Cooking
  1. In a large skillet, heat some olive oil over medium heat.
  2. Place the potato balls in the skillet, making sure not to overcrowd them. Cook for about 6-8 minutes, turning occasionally, until they are golden brown and crispy on all sides.
  3. Once cooked, place the bites on a paper towel to drain any excess oil and serve warm.
Serving
  1. Pair these with a tangy dipping sauce for an extra kick!

Notes

Feel free to use leftover mashed potatoes or try baking them at 400°F for about 20 minutes instead of frying for a healthier option. Adjust breadcrumbs or mashed potatoes if the mixture is too sticky.
