  • 1 lb ground beef the fresher, the better!
  • 1 small onion, finely grated
  • 2 cloves garlic, minced or more if you’re a fan!
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped mint adds a refreshing twist!
  • 1 tsp cumin that warm, earthy flavor
  • 1 tsp paprika
  • 1/2 tsp salt adjust to taste
  • 1/4 tsp black pepper
  • as needed skewers wooden or metal; soak wooden ones in water first for about 30 minutes to avoid burning!

Preparation
  1. In a mixing bowl, combine the ground beef, grated onion, minced garlic, parsley, mint, cumin, paprika, salt, and black pepper. Mix just until combined; overworking the meat can lead to tough kebabs.
Shaping Kebabs
  1. Divide the mixture into 6-8 equal portions and shape them around your skewers, aiming for about 1-2 inches in diameter.
Grilling
  1. Preheat your grill to medium-high heat (around 375°F to 400°F). Place your skewers on the grill and cook for about 8-10 minutes, turning occasionally, until they’re browned and cooked through.
Serving
  1. Once done, remove the kebabs from the grill and let them rest for a few minutes. Serve with your favorite dips, like tzatziki or hummus, and a fresh salad on the side.

Notes

For juicier kebabs, consider mixing in a splash of olive oil or a little egg into the meat mixture. You can also add finely chopped bell peppers or zucchini for added nutrition and flavor.
