  • 2 pounds ground beef Nothing too fancy, just the good stuff
  • 4 medium potatoes, peeled and sliced thinly The more, the merrier
  • 1 medium onion, chopped For added flavor
  • 2 cloves garlic, minced The secret weapon for flavor
  • 1 can (10.5 oz) cream of mushroom soup Or homemade if feeling ambitious
  • 1 cup sour cream For creaminess
  • 1 cup shredded cheese Cheddar is a great choice
  • to taste salt and pepper
  • as needed olive oil For sautéing

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat a splash of olive oil over medium heat.
  3. Add the chopped onions and minced garlic. Sauté until fragrant and the onions are slightly translucent.
  4. Add in the ground beef and cook until browned, breaking it apart with a spatula.
  5. Drain any excess fat and stir in the cream of mushroom soup and sour cream until combined.
  6. Season with salt and pepper to taste.
  7. In a greased 9x13 inch baking dish, layer half of the sliced potatoes, half of the beef mixture, and half of the cheese. Repeat with the remaining potatoes, beef, and top with the remaining cheese.
  8. Cover the dish with aluminum foil and bake for 45 minutes.
  9. Remove the foil and bake for an additional 15-20 minutes or until the cheese is melted and bubbly, and the potatoes are fork-tender.
  10. Let it cool for a few minutes before serving warm.

Notes

Can substitute ground beef with turkey or chicken. For added nutrition, consider adding frozen mixed veggies or steamed broccoli. For extra flavor, sprinkle paprika or Italian seasoning before baking.
