Preparation
- Peel and chop your potatoes into chunks. Place them in a large pot, cover with water, and add a pinch of salt. Bring to a boil and let them cook until tender (about 15-20 minutes).
- While your potatoes are cooking, heat your olive oil in a large skillet over medium heat. Add the sausages and cook until they are golden brown and cooked through, about 12-15 minutes.
Gravy
- In the same skillet, remove the sausages once done but leave the drippings behind. Add your sliced onion and sauté until soft and caramelized (about 5 minutes).
- Sprinkle flour over the onions and cook for 1 minute, stirring constantly. Gradually add the broth, stirring until the gravy thickens. Season with salt and pepper to taste.
Mash
- Once your potatoes are tender, drain them and return them to the pot. Add the butter and milk, then mash until creamy and smooth. Don’t forget to season with a little salt and pepper!
Serve
- Place a generous scoop of mashed potatoes on each plate, top with the sausages, and drizzle the fabulous onion gravy over everything.
Notes
For the creamiest mash, opt for starchy potatoes like Yukon Gold. Feel free to add extra onions for more flavor. Try different types of sausages for variety!
