Method
Prepare the crust
- Preheat your oven to 350°F (176°C).
- Mix the graham cracker crumbs, melted butter, and sugar in a bowl until well combined.
- Press the mixture into the bottom of a 9-inch springform pan and bake for about 10 minutes.
- Let it cool while you prepare the filling.
Create the cheesecake filling
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the powdered sugar, vanilla extract, and lemon juice, continuing to beat until creamy.
- Gently fold in the whipped cream until the filling is light and airy.
Assemble the cheesecake
- Pour the cheesecake filling over the cooled crust and spread it evenly.
- Arrange the banana slices and strawberries on top of the cheesecake.
- Use a little lemon juice on the bananas to prevent browning.
Chill out
- Cover the cheesecake and refrigerate for at least four hours (overnight is better) to set.
Serve with flair
- Remove the sides of the springform pan and garnish with extra strawberries or chocolate shavings.

Notes
You can replace graham crackers with crushed cookies or oats for the crust. Adjust sugar levels to your taste, and consider adding crushed nuts for added crunch.
