  • 2 cups crushed pineapple, drained Juice reserved for later use.
  • 2 medium bananas, sliced The riper, the better for sweetness.
  • 1 cup mini marshmallows Cute bite-sized versions.
  • 1 cup whipped topping Homemade or store-bought is fine.
  • 1/2 cup shredded coconut Optional, but adds great flavor.
  • 1/2 cup chopped pecans or walnuts For added crunch.

Preparation
  1. In a large bowl, combine the crushed pineapple and sliced bananas, stirring gently to combine.
  2. Fold in the mini marshmallows, whipped topping, shredded coconut, and chopped nuts carefully.
  3. Drizzle reserved pineapple juice over the mixture and give it a final gentle stir to combine everything.
  4. Cover the bowl and refrigerate for at least an hour before serving.
  5. After chilling, serve with a spoon and add extra coconut or nuts as garnish if desired.

Notes

For preventing browning, add lemon juice to bananas before mixing. This salad can be made ahead of time for more flavor. Feel free to customize with strawberries or blueberries.
