Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix together the soft cream cheese and butter until fluffy.
- Gradually mix in the sugar, and then add the eggs one by one.
- Gently fold in the mashed bananas and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry mix into your wet mixture, stirring gently until just combined.
- Pour the batter into a greased and floured loaf pan.
Baking
- Bake in the oven for about 60-70 minutes, until golden brown and a toothpick comes out clean.
Cooling
- Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack.
Notes
Ripe bananas enhance the sweetness. Feel free to add chocolate chips or walnuts for texture.
