Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, beat together the cream cheese and butter until creamy.
- Add the granulated sugar and brown sugar, mixing until fluffy.
- Beat in the eggs, one at a time, making sure each egg is well incorporated.
- Add the mashed bananas and vanilla extract, blending until just combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add this dry mix to the wet ingredients, folding gently until everything is combined.
- Pour the batter into a greased loaf pan and smooth the top.
Baking
- Bake for about 60–70 minutes, or until a toothpick inserted into the center comes out clean.
- If the cake starts getting too brown, cover it with foil.
- Once baked, let your masterpiece cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
For the best flavor, let your cake sit for a few hours before slicing. This cake is fabulous on its own, but feel free to spread a little more cream cheese frosting on top for an extra special treat.
