  • 1 cup cream cheese (softened)
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 ripe bananas (mashed)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat together the cream cheese and butter until creamy.
  3. Add the granulated sugar and brown sugar, mixing until fluffy.
  4. Beat in the eggs, one at a time, making sure each egg is well incorporated.
  5. Add the mashed bananas and vanilla extract, blending until just combined.
  6. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  7. Gradually add this dry mix to the wet ingredients, folding gently until everything is combined.
  8. Pour the batter into a greased loaf pan and smooth the top.
Baking
  1. Bake for about 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  2. If the cake starts getting too brown, cover it with foil.
  3. Once baked, let your masterpiece cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

For the best flavor, let your cake sit for a few hours before slicing. This cake is fabulous on its own, but feel free to spread a little more cream cheese frosting on top for an extra special treat.
