  • 3 pieces ripe bananas, mashed The riper, the better for sweetness and flavor.
  • 1 cup unsweetened applesauce Homemade is preferable, but store-bought is fine.
  • 1/4 cup melted butter Can substitute with coconut oil.
  • 2 large eggs Can substitute with flax eggs for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon Adds a wonderful spice.
  • 1 1/2 cups all-purpose flour Can use whole wheat flour for a healthier option.
  • 1/2 cup sugar Can be adjusted to taste or substituted with honey/maple syrup.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a standard 9x5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the mashed bananas, applesauce, and melted butter. Stir until well blended. Add sugar, eggs, and vanilla extract; mix until smooth.
  3. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
Baking
  1. Pour the batter into the prepared loaf pan. Bake for 60-65 minutes, or until a toothpick comes out clean.
  2. Allow it to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.

Notes

For added texture, consider adding chopped walnuts or chocolate chips. Keep leftover bread fresh by wrapping it tightly in foil or plastic wrap. Can be stored at room temperature for up to 3 days or frozen for up to 3 months.
