  • 4 pieces salmon fillets
  • 1 bunch asparagus, ends trimmed
  • 3 tablespoons butter, melted
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced or more if you really love garlic
  • Salt and pepper, to taste
  • Lemon slices, for garnish
  • Optional: fresh parsley, for garnish for an extra touch of fancy

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Tear off 4 pieces of aluminum foil, about 12 inches long each.
  2. Lay the asparagus in the center of each piece of foil and season with salt and pepper.
  3. Place one salmon fillet on top of the asparagus. Drizzle a generous tablespoon of melted butter and lemon juice over the salmon, and sprinkle minced garlic on top.
  4. Fold the foil over the salmon and asparagus to create tightly sealed packets.
Cooking
  1. Place the foil packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork.
  2. Carefully open the foil packs, serve with lemon slices and sprinkle with fresh parsley.

Notes

Salmon is best when slightly pink in the center. You can customize the vegetables or serve with quinoa or salad for a complete meal.
