Chicken
  • 4 pieces boneless, skinless chicken breasts Can substitute with chicken thighs.
Sauce
  • ½ cup unsalted butter, melted Essential for the sauce.
  • 2 large lemons, zested and juiced Add fresh flavor.
  • 4 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme Can substitute with rosemary or oregano.
  • to taste Salt and pepper Season as desired.
Garnish
  • to taste Chopped parsley For garnish.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Spray a baking dish with non-stick cooking spray.
  2. In a mixing bowl, combine melted butter, lemon zest, lemon juice, minced garlic, thyme, along with salt and pepper. Stir to blend.
Cooking
  1. Place chicken breasts in the baking dish and coat them with the lemon-butter mixture.
  2. Cover the dish with foil and bake in the preheated oven for about 25 minutes.
  3. Remove the foil and bake for an additional 10-15 minutes until chicken is golden.
Serving
  1. Sprinkle with chopped parsley and serve hot.

Notes

Make ahead and refrigerate before baking. Adjust cooking time if using chicken thighs.
