Baked Chicken Burritos with Cheesy Green Chili Sauce

Ingredients
  

For the Burritos
  • 2 cups shredded cooked chicken leftovers or rotisserie chicken works
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup corn frozen works perfectly
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ cup shredded cheese cheddar or Monterey Jack
  • 4 large flour tortillas
For the Cheesy Green Chili Sauce
  • 1 can (10 oz) green chili sauce or homemade if adventurous
  • 1 cup sour cream
  • 1 cup shredded cheese more cheese is never a bad idea
  • 2 tbsp chopped fresh cilantro optional for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the chicken, black beans, corn, cumin, chili powder, and cheese. Stir to combine.
Assembly
  1. Lay one flour tortilla flat and scoop a generous portion of the chicken mixture onto the center. Fold in the sides and roll tightly.
  2. Repeat with the remaining tortillas.
Make the Sauce
  1. In a separate bowl, mix together the green chili sauce and sour cream.
  2. Pour half of this mixture into a baking dish, place the burritos in the dish, and pour the remaining sauce over the top. Sprinkle extra cheese on top.
Bake
  1. Cover the dish with foil and bake for about 20 minutes.
  2. Remove the foil and bake for an additional 10 minutes until bubbly and golden.
Serve
  1. Garnish with cilantro if desired and serve hot.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven. Can be frozen before baking; just add extra baking time when cooking from frozen.
