Filling Ingredients
  • 2 cups shredded cooked chicken (rotisserie chicken works like a charm!)
  • 1 cup cooked rice (brown or white, whichever you prefer)
  • 1 cup black beans (rinsed and drained)
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Monterey Jack—the gooier, the better)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
Sauce and Garnish Ingredients
  • 1 can green chili sauce (10 oz)
  • 1/2 cup sour cream (for drizzling on top)
  • Fresh cilantro (optional, but highly recommended)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, half of the shredded cheese, cumin, paprika, salt, and pepper. Mix well.
  3. Lay out the flour tortillas and spoon a generous amount of the chicken mixture down the center of each tortilla. Roll them up tightly, tucking in the sides.
  4. In a small saucepan, warm the green chili sauce over low heat. Stir in extra cheese if desired.
Baking
  1. Place the burritos seam side down in a baking dish. Pour the cheesy green chili sauce over the top and sprinkle the remaining cheese.
  2. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
Serving
  1. Let the burritos cool for a minute. Drizzle with sour cream and sprinkle fresh cilantro on top before serving.

Notes

These burritos are great for meal prep! You can prepare the filling in advance and assemble the burritos when ready to bake. Additional tips: Substitute ingredients as needed for picky eaters, and don't worry about the sauce being lumpy.
