Ingredients
  

Burrito Filling
  • 2 cups cooked chicken, shredded
  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 teaspoon taco seasoning Adjust based on your spice tolerance!
  • 8 large flour tortillas
Sauce and Garnish
  • 1 can 10 oz green chili sauce Add more if you like it saucy!
  • 1 cup sour cream Optional for serving
  • Fresh cilantro, chopped For garnish

Method
 

Preheat the Oven
  1. Set your oven to 350°F (175°C) and let it warm up while you gather your ingredients.
Mix the Filling
  1. In a large bowl, combine the shredded chicken, black beans, corn, rice, cheese, and taco seasoning. Mix until well combined.
Assembly Line
  1. Lay out your tortillas on a clean surface. Spoon about a quarter of the filling mixture onto each tortilla, then roll them up tightly and place seam-side down in a greased baking dish.
Sauce it Up
  1. Pour the green chili sauce evenly over the top of the burritos, ensuring every nook and cranny gets a taste. Sprinkle more cheese on top.
Bake
  1. Cover the dish with foil and bake for about 25 minutes. Remove the foil and bake for another 10 minutes until the cheese is bubbly and golden.
Serve and Enjoy
  1. Let them cool for a couple of minutes before serving. Pair with sour cream and cilantro if desired.

Notes

Customize the filling with your favorite proteins or veggies. Leftover burritos can be stored in the fridge for up to three days or frozen for later.
